Description
THEY TAKE THEIR NAME FROM CELERY, AND ALL THEIR FLAVOUR FROM THE SAUCE
Among the many varieties of maccheroni, sedani rigati Barilla n°94 are one of the best-known tubular pasta shapes in the Italian tradition. Initially popular in Naples in a smooth version and known as “elephant's teeth”, they acquired their current name with the introduction of fine ridges on the surface, reminiscent of the ribs of celery stalks. Elegant and slightly curved, these delicate grooves allow them to capture the sauce without overpowering it, making them particularly suitable for fresh, light-flavoured preparations. They pair well with the creaminess of ricotta and the freshness of basil, as well as with fish sauces, vegetables and Mediterranean-style dressings, offering plenty of scope for creativity in the kitchen. Their versatility also makes them an interesting base for recipes seeking a balance of delicacy, textures and flavours. The 5 kg format fits perfectly into the pace of the Ho.Re.Ca. sector, providing restaurants, catering operations, hotels and professional kitchens with a quantity suited to preparing numerous covers and ensuring continuity of service. Cooking time: 12 minutes; for every 100 g of pasta, approximately 1 litre of water and 7 g of salt are recommended. Alternatively, passive cooking can be used: after 2 minutes of active cooking, turn off the heat, cover the pot with a lid and allow the heat of the water to complete the cooking for the required time. This technique helps save energy and reduce CO₂ emissions without compromising the correct cooking of the pasta. Store in a cool, dry place.
