This white chocolate by Luigi Zaini carries with it a story spanning more than a century of Italian tradition. After the premature death of the founder Luigi Zaini, his wife Olga Zaini took over the company, establishing herself as one of the very few female industrialists of her time. Determined and visionary, she surrounded herself with a predominantly female staff and introduced equal opportunity among the company’s core values; it is no coincidence that the factory was affectionately nicknamed “la fabbrica dei tosan”, meaning “the factory of the girls.” Before entrusting the leadership of the business to her sons Vittorio and Piero, Olga wished to pay tribute to a fundamental figure in her life, Emilia, the nanny who cared for her children and allowed her to devote herself fully to her work; from this gesture comes the name of this chocolate, a symbol of gratitude and identity. To this day, Emilia white chocolate is characterised by the typical flavour and aroma of white chocolate, fully reflecting the defining features of its category.
