This semi-hard stretched curd cheese is made from cow's milk processed according to the classical tradition, with veal rennet and possible thermization or pasteurization treatment. It is cylindrical in shape, with a smooth, thin and shiny crust, untreated. White or straw pasta has a delicate, lactic aroma, while the flavor varies depending on the aging process: sweet and buttery in young versions, more flavorful and bold in spicy pasta versions, where the spiciness intensifies over time. Versatile and genuine, it is ideal for cutting boards, appetizers or traditional Mediterranean recipes. To be stored between 0°C and +15°C.
