Valcolatte Stracciatella is made from 100% Italian cow’s milk, carefully selected and pasteurised to provide the Horeca channel with a fresh, safe and consistent ingredient. It is a fresh stretched-curd cheese with cream (60%), characterised by strands of stretched curd blended with fresh cream, which together create a creamy texture with a pleasant fibrous component typical of stracciatella. In appearance, it presents as a milk-white cream interwoven with soft, delicate strands; on the spoon it is velvety, with a light fibrous presence that adds body without heaviness. The aroma is clean and milky, reminiscent of fresh cream, while the flavour is sweet, rounded and naturally balanced, with a delicate persistence that enhances every pairing. Ideal for finishing gourmet pizzas, enhancing focaccia and bruschetta, enriching starters and bowls, or accompanying fish dishes and seasonal vegetables, this stracciatella represents a versatile solution for restaurants, pizzerias and bistros wishing to bring to the table the creamiest and most authentic side of Italian dairy tradition, with an ingredient capable of elevating each preparation without overpowering its identity.
