Pecorino aged with Chianti DOCG wine is a cheese with a strong, bursty character, made with pasteurized sheep's milk from the EU. Its medium-long maturation gives the pasta a compact structure and a uniform white color, which over time develops elegant chalky facets, a sign of optimal ripening. The deep brown rind comes from the treatment with olive oil fondami, which enhances its fragrance and taste. The distinctive element is the surface delicately flavored with Vino Chianti DOCG, a process certified by the Consortium, which provides unmistakable vinous notes and enriches the sensory experience. Perfect to enjoy as a table cheese, featured in cutting boards or paired with wines and jams. Perfect to enjoy in cutting boards and appetizers, it pairs elegantly with structured red wines or fruit jams, but it also expresses itself best grated over pasta and risottos, adding a touch of intense and distinctive flavor to each dish.
