Description
White PDO Pecorino Romano cheese. Long-ripened, hard, cooked cheese, obtained by coagulation of thermised whole Sardinian sheep's milk with the addition of lactic ferment culture, salt and lamb rennet. A cheese with a compact paste, slightly straw-coloured. The typical milk fragrance can be detected in the aroma. It is characterised by a strong, salty flavour, which makes it ideal to enrich many Italian dishes: traditionally grated over pasta, it is perfect for dishes such as cacio e pepe, carbonara and amatriciana.
