Description

Short-ripened red sheep's milk cheese made from pasteurised Italian sheep's milk, Volterra salt, rennet and milk enzymes. Characterised by a bright red rind due to treatment with tomato paste on the surface. The paste is smooth and elastic, white in colour and tending to straw yellow as ripening progresses. The flavour is sweet, with a typically milky aroma. Ideal as an after-meal.
