Description

A semi-matured Roncione sheep's milk cheese ripened in hay, made from raw sheep's milk, Volterra salt, rennet and milk enzymes. A cheese with a rich and intense flavour, recalling the typical scents and smells of pastureland. The paste is hard and crumbly, pearl white in colour, the rind is hard and thick and covered with straw to recall the maturing process in caves. Excellent eaten on its own, or to enrich seasonal salads, combined with honey or fruit preserves, or grated over pasta dishes to add an extra aromatic note.
