TREASURES HIDDEN AMONG WOOD AND STRAW
Semi-seasoned Pecorino Roncione aged in hay is an Italian cheese made from raw sheep's milk, Volterra salt, rennet, and lactic acid bacteria. Its natural aging takes place first in a dairy farm, then in the eighteenth-century cave of Roncione, where the cheese rests on wooden planks and straw, developing a unique and complex aroma reminiscent of the scent of meadows and pastures. The pasta is hard and crumbly, pearly white in color, while the hard and thick crust is covered with straw to protect the maturation and is inedible. The cave's natural microclimate enriches the cheese with deep aromatic notes and makes it naturally lactose-free. Perfect for eating on its own, paired with honey, jams, or dried fruit, or grated over pastas and risottos, to add an intense and enveloping aromatic touch. Store between +4°C and +8°C.
