FLAVOUR ROOTED IN TRADITION
Ambrosi Parmigiano Reggiano DOP aged over 22 months represents an authentic expression of Italy’s great cheesemaking tradition. Made from raw cow’s milk, salt and rennet in accordance with the DOP regulations, it develops over time a broad and distinctive aromatic profile. The extended ageing gives the paste a compact and finely granular structure, with a clean radial fracture and barely visible eyes; the colour ranges from pale straw yellow to deeper tones, a natural sign of maturation. On the nose, fragrant notes emerge, reminiscent of hay and pasture, while on the palate the flavour is full, harmonious and persistent, capable of enhancing any preparation without overpowering its identity. The hard, edible rind, approximately 6–8 mm thick, protects a dry and firm paste, ideal for grating, flaking or precise portioning. Perfect for risottos, filled pasta, soups, sauces and table-side finishing, the 1 kg vacuum-packed format (12 pieces per carton) ensures practicality, consistent yield and reliability for hotels, restaurants and catering services seeking recognisable and constant quality.
