UHT Cooking Cream 35% Lactose-Free is designed for chefs and pastry chefs who want to offer high-quality creations even for those who are lactose intolerant. It is a cream with 35% fat, with a full and natural taste, free of additives and characterized by a creamy, stable and easily workable consistency. Perfect in both cooking and pastry making, it guarantees excellent yield and hold in whipped preparations, creams and hot recipes. It is whipped between 0°C and +4°C in a cold container with cold sugar, using about half as much as a cream with lactose. Versatile and reliable, it gives balance and creaminess to every dish. After opening it is kept for 4 days at a temperature between +2°C and +7°C.
