Description
WITH 100% ITALIAN BUFFALO MILK: ROUND, ALMOST PERFECT, CUT WITH A FORK
This Campana DOP buffalo mozzarella is made from fresh pasteurized Italian Mediterranean buffalo milk, harvested within 60 hours of milking and processed with traditional natural graft whey. The buffalo, raised on pasture in semi-free housing, guarantee a rich and fragrant milk, with a minimum fat content. After coagulation and spinning in hot water, the mass is “severed” by hand, a gesture from which the very name mozzarella derives. Round in shape, it has a very thin and smooth crust with a porcelain-white colour and a thin-leaved paste, initially elastic and then melting, which when cut releases a slight whitish and fatty serosity with the scent of lactic ferments. On the palate it reveals a characteristic, delicate and unmistakable flavour, a symbol of the authentic Campanian tradition. The product maintains its characteristics unchanged when stored in its own governing liquid, between +4°C and +12°C, as reported on the label.
