FLAVOUR BUILT OVER TIME
Ambrosi Grana Padano DOP, aged for over 15 months, is made from Italian raw cow’s milk, salt and rennet in full compliance with the production regulations, representing an authentic expression of Italian cheesemaking tradition. The long maturation gives the cheese a compact, finely granular texture, with a well-defined radial fracture and almost no visible micro-eyes; the colour ranges from delicate straw yellow to more intense shades, reflecting the natural evolution of time. On the nose it is soft and fragrant, while on the palate it offers a balanced savouriness that enhances preparations without overpowering them. The hard, edible rind, approximately 6–8 mm thick, protects a dry and firm paste, ideal both for flake service and culinary use. Perfect for pasta dishes, sauces, creaming processes and structured recipes, it combines versatility and recognisability on the plate. The 4 kg vacuum-packed format is designed for hotels, restaurants and catering services requiring consistent performance, continuity of use and organised management in professional kitchens.
