Spicy Gorgonzola DOP is a raw cheese made from pasteurized whole cow's milk and curled with selected lactic ferments and Penicillium molds, which give it its characteristic bold, slightly spicy flavor. With a minimum maturation of 80 days, it develops an intense and enveloping aroma, perfect for the most demanding Ho.Re.Ca. preparations. The pink crust, wrinkled and unedible, encloses a soft, straw-white paste, dotted with the typical blue-green veins that make each piece unique. Ideal for serving at the table or for use in gourmet recipes, from risotto to creamy sauces, it enhances each dish with its authentic taste and unmistakable aroma. Store between 2°C and 6°C.
