Formaggio Molle Leonardo Arrigoni Sergio is an Italian cheese specialty made with pasteurized cow's milk, dedicated to those seeking a versatile and characterful product for professional cooking. After a minimum maturation period of 90 days, it develops a balanced structure: the pasta is crumbly and compact, while it remains softer and creamier near the crust. The thin, wrinkled crust, brown in color, is characterized by the presence of native gray molds, which help outline an intense and natural olfactory profile, with herbaceous notes reminiscent of freshly cut grass. To taste it expresses a fresh acidity accompanied by complex and persistent nuances, capable of enriching each preparation without overpowering it. Thanks to its high versatility in the kitchen, Leonardo is ideal for churning first courses, making creams and fillings, or for enhancing appetizers, croutons, and baked goods.
