AN AROMATIC JOURNEY THAT EVOLVES OVER TIME: FROM THE HEART OF 100% ITALIAN MILK TO HINTS OF UNDERWOOD It is a raw paste blue-veined buffalo cheese with a characteristic parallelepiped shape. Made exclusively with pasteurized buffalo milk, it has a dry, grooved crust of amber-grey colour. The paste, generally creamy and pale straw in colour, presents blue veins of varying intensity and some irregular cavities. Its aroma is intense, with notes of mature milk and mould. As the ageing period increases, it develops hints of underwood and mushroom. The flavour is intense and lingering, often softened by the rich sensations typical of buffalo milk. Ageing lasts at least 90 days, reaching peak sensory enjoyment at 6 months of maturation. Store in the refrigerator between 1° and 6°C.
