In the ideal format for gourmet delicatessens and restaurants, Blu di Bufala is a raw blue-veined cheese made exclusively from pasteurized buffalo milk. Its characteristic rectangular shape encloses a creamy pale straw-colored paste, streaked with irregular blue veins and small natural cavities. The dry, ridged rind, in gray-amber tones, reflects a slow and patient aging of at least 90 days, which can extend up to six months to develop its full aromatic expression. The aroma is intense, with notes of matured milk and noble molds, evolving over time into hints of forest floor and mushrooms. On the palate, it reveals a deep and persistent flavor, always balanced by the soft, creamy sensations typical of buffalo milk. Recognized internationally in major cheese competitions, such as the World Cheese Awards and the Mondial du Fromage, it represents one of the highest expressions of Italian cheesemaking art.
