Formai Dé Rustì from Caseificio F.lli Paleni is a semi-fat cheese made with pasteurized Italian cow's milk, sourced exclusively from the mountainous areas of the Seriana Valley. Its maturation between 30 and 90 days develops a dry, compact and sustained paste, with a straw-white colour, with uneven variegated eyes. The thin, smooth, slightly wrinkled, edible crust becomes darker and more compact as it ripens, while the sweet, aromatic flavor intensifies as it ages, accompanied by a delicate, slightly acidic aroma. Designed for catering and professional kitchens, Formai Dé Rustì is ideal for cutting into square slices, ready to be grilled, pan-fried, or microwaved. Also excellent served directly on the table, in gourmet cutting boards, hot sandwiches or as an ingredient for creative dishes, it adds a sweet and aromatic touch, capable of enhancing every preparation, both hot and cold. Store +1°C to +6°C (whole form); +1°C to +4°C (cut slices, protecting the cutting area with food film).
