Formagella Bronzone is made from Italian pasteurised whole milk, sourced exclusively from members of the Cooperativa Agricola Monti e Laghi, an organisation deeply rooted in the province of Bergamo. It is a semi-cooked, short-aged cheese, matured for at least 40 days – the time needed to develop an intense yet harmonious flavour – designed for both everyday and professional use. The compact, elastic texture features a medium-fine grain, offering a balanced chew and a nice, even cut. In the kitchen, it lends itself to various uses: it is delightful served on its own on a chopping board, pairs naturally with honeys and jams, and retains its structure and character even in hot dishes. A small cheese that reflects the local area, a controlled supply chain and respect for the raw material, designed for those who create coherent and conscious culinary offerings. Store in the fridge at a controlled temperature between +4°C and +11°C.
