Description

Fontina vera Aosta PDO matured for at least 80 days, with milk, rennet and salt. Matured cheese made from raw cow's milk from cows of the Valdostana breed, processed within 2 hours of milking according to tradition and to a specification. A product with a soft consistency and a mild, slightly buttery flavour, with notes of dried fruit and grass. It is often used in the preparation of traditional Valdostan dishes, such as fondue and polenta concia, but is also excellent enjoyed on its own or accompanied by bread and wine.
