Description
THE KING OF AMATRICIANA Guanciale, the essential ingredient for the famous pasta all’amatriciana, comes from the pork cheek. After being salted and seasoned with spices, it undergoes a drying process. Once removed from the salt, drained, and tied with string, it is seasoned with pepper to enhance its flavour, giving it character without altering its authentic taste. The curing process is completed in about three months. Store in a cool, dry place.
