Description

Cooked whole ham in a vacuum-packed bag. Production process: the thighs, boned and trimmed, are syringed with brine containing additives and then subjected to churning. After churning, the products are placed in specific moulds for subsequent cooking in saturated steam ovens. Once this phase is completed, the products are taken to the cooling cell to reach a rapid temperature reduction. Then the hams are removed from the moulds, vacuum-packed and pasteurised.
